opentls: deprecate "default" as an option in encryption-handling node

In app-layer.protocols.tls.encryption-handling we, by default, choose "default" option, which by itself is not very descriptive of what it does.
I suggest to deprecate it Suricata 9 and replace it with "track-only". The change is only in the naming and track-only should work the same as default option.
