There are now CentOS Linux and CentOS Stream.

Update our documentation where CentOS is cited accordingly.

According to https://www.centos.org/cl-vs-cs/, CentOS 7 is now called CentOS Linux 7, while CentOS 8 is now called CentOS Linux 8...
